The first weekend of April is known as Maple Weekend in Ontario, a time where familles can explore how syrup is made after the winter thaws.
Residents can head over to syrup producers like Rock Maple Lodge, near Cambridge, to take in the natural process from tapping the tree, to boiling the water out to create the bottle found on many Canadian breakfast tables.
Rock Maple Lodge was started nine years ago by Peter and Karen Hamilton on their property in Branchton, where they have resided for close to 50 years.
It's there they produce maple syrup that's distributed around the world.
"I'm a house builder by trade so I was able to build all this," said Hamilton. "We have fun while we do it. It's mainly my wife and I but we have friends, neighbours that come by to help. It's a fun time for everyone. We do everything here by hand, ourselves. We put it in the bottles and put the labels on."
Every bottle of syrup is packaged by hand at Rock Maple Lodge.
Hamilton has seen a much better year for producing maple syrup than the previous as this past winter provided colder temperatures with fewer rainy days. Perfect sap weather, as he puts it.
"We have more than last year, it's been a better year. Not only that but the quality, you can taste it."
As Maple Weekend kicks off, he's looking forward to hosting tours this weekend to show others how the sticky Canadian favourite is created.
Rock Maple Lodge is set to host 90 people Friday and 50 on Saturday to help celebrate the harvest while it lasts.
